So are you having fun with the all the peppers yet? I’ve included a really easy green chili sauce recipe that’ll work well with the green ones. Doug’s Kashmiri curry powder is one of my favorites, so you’ll definitely have a spicy week!
CURRIED BUTTERNUT SQUASH SOUP WITH COCONUT MILK
2 tablespoons olive oil
2 onions, finely diced
3 garlic cloves, minced
1 tablespoon minced ginger root
1 tablespoon curry powder
4 cups water (substitute chicken broth or vegetable broth)
7 to 8 cups diced butternut squash (1 large 3-pound)
2 teaspoons sugar
1 1/4 teaspoons salt
One 14-ounce can unsweetened coconut milk
2 tablespoons lemon juice
1. Warm oil in a large stockpot over medium heat. Stir in onions, garlic, ginger root and cook 5 minutes. Sprinkle on curry powder and cook 1 minute, tossing continuously.
2. Pour in water and bring to a boil. Mix in squash, sugar, salt, and lower heat to a lively simmer. Cook 30 minutes, or until squash is very tender. Pour in coconut milk and simmer 5 minutes. Stir in lemon juice.
3. Puree soup in batches in a blender and return to a smaller pot, if desired. Reheat before serving, if necessary.

*For a bonus garnish with diced tomatoes, or a dollop of the green chili sauce and sour cream! YUM!
GREEN CHILI SAUCE
□ 2 tbsp. oil or lard
□ 1 clove garlic (opt.)
□ 1/2 c. minced onion (opt.)
□ 1 tbsp. flour
□ 1 c. water
□ 1 c. diced green chili
□ Salt to taste
In oil in a heavy saucepan, saute garlic and onion. Blend in flour with wooden spoon. Add water and green chili. Bring to a boil and simmer, stirring frequently, for 5 minutes.
This sauce may be used as a topping for eggs, served with beans or meat, in tacos or made into green enchiladas.
